Flourless Chocolate Torte

 
 

I've been making some version of this dense gluten-free chocolate cake for years.

After it cools, I pop it in the fridge overnight, cut it, and freeze the pieces.

It makes a gorgeous dessert, especially when paired with berries and coconut whipped cream!

However, it's also luxurious on its own.

*Note: To cut it, once it is quite cold from several hours in the fridge - keep a large pitcher of hot water nearby to heat up and to moisten your knife with, as well as a dry towel. This will help in-between cuts.

Enjoy!

Melt in a double boiler slowly:

  • 17 oz dark chocolate (55% to 70%), chopped

  • 4 oz ghee or coconut oil (plus extra for greasing pans)

  • ½ tsp salt

Warm mixture until the honey dissolves into the water:

  • ¾ cup honey (raw is nice!)

  • 1 cup water

Combine and set aside (don’t mix):

  • 5 whole eggs

  • 2 egg yolks

  • 1 tsp vanilla extract

Directions:

  1. Preheat oven to 400.

  2. Rub ghee or coconut oil on small oven-proof ramekins, or a larger souffle dish. Size of dish is a bit flexible.

  3. Lay dish(es) in a larger pan.

  4. Combine the melted chocolate mixture with the honey water mixture into a stand mixture and beat slowly for about 5 minutes to cool mixture a bit.

  5. Add the eggs slowly, one by one as mixer is going.

  6. Pour mixture in ramekins or souffle dish. Pour ¼” hot water in bottom of pan, and cover larger pan with foil, leaving an inch at the end open to vent (see video).

  7. Bake until middle jiggles (45 to 70 min, depending on size of pan).
